I do tons of cooking! But I hate coconut too And coconut flour has a really strong flavor. You could maybe coat it in chocolate? Enjoy Life has dairy-free chocolate that's really good, but I doubt it's sugar free :/
I have a cookbook called the Welcoming Kitchen that's free of a lot of things, lemme go get that out and see if it has anything interesting. Edit: Aw drat, sugar's not one of them ><

Hm, I could get some 100% cocoa, like that powdery stuff for baking, and add some almond oil and fake sugar and turn it into a dip, make these into little balls and coat them in that and freeze them? Maybe?

Can she have honey? I don't know if that counts as a sugar or a sugar replacement XD But it's really good with pears! And if you need something to firm up the crust a bit more, you could add some gluten-free oats if you have them.
