Yeah, that's how XIV works. So, let's say you start off as a Pugilist. You get all the way to level 30. Well, there's no longer any real job progression for Pugilist. But if you happen to have 15 levels in Lancer as well, then you can undertake class missions to become a Monk.
So the base classes are Gladiator, Marauder, Conjurer, Arcanist, Thaumaturge, Lancer, Archer, and Pugilist. There's technically Rogue, too, but it's not available from the very beginning.
Then you have your advanced jobs. Paladin, Warrior, White Mage, Black Mage, Summoner, Scholar, Monk, Bard, Dragoon, and Ninja.
And then there are classes that become available with expansions.
Heavensward gives you Dark Knight, Atrologian, and Machinist.
Stormblood will give us Red Mage and Samurai.
As to why they don't offer bundles for the subscription, I can only image it's because it's an account-based thing. Chris has to have an account to play, and I have to have an account to play. Everything is very neatly tracked on the Mogstation for each individual account. So if he got bored of playing, but I still loved it, I could still subscribe even if he didn't want to.
