Aw, I adore Anime Soundtracks. 
My timeless favorites are:
- Tiger & Bunny: Hoshi no Sumika - japanese.
- Digimon: Butterfly, Braveheart, "Sei Frei" (Evo?), "Spiel dein Spiel" (Slash?) - all in german, english and japanese.
- Pokémon: First Opening (Pokémon Thema), Johto Theme (especially the version of movie 3 *-*) - all in english, german and japanese.
- Tengen Toppa Gurren Lagann: Sorairo days - japanese.
-Kimi ni Todoke: First Opening - japanese.
- Detective Conan: Truth - english, german, japanese.
- Tales Of Symphonia: Opening - japanese.

If I were to have an anime opening as my theme song I'd definitely go with "School Boys" from Gakuen Heaven
I really love how upbeat the song it, it's wonderful to pop on when you get up in the morning
I opening song from Attack on Titan is really upbeat and energizing (only the TV size though)
"Jap" (the opening song from Sengoku Basara) is another great energizing one
"Genesis of Next" from Cyborg 009 despite being long is really really good too
(it's one of those songs I've always had on my mp3 player listen to when it comes on)
"Miracle that Stars with a Kiss" from Steel Angle Kurumi is another one I've liked for a long time
There's probably more I really like but I know that these ones are some of my favorites
