Do you automatically switch to whatever language you hear around you? I sometimes run into trouble where if I'm somewhere they speak something I only know a *little* bit of, my mind flips to the next-best-besides-mother-tongue language instead of the one in question.

Not always. I only hear Japanese lately so that isn't the case.
I suspect I answer in whatever language I was thinking in when I was interupted.

Ha ha ha, that's a great image though! If I were near you irl I'd definitely be making private wagers with myself all the time about which one you'd use.

I usually try my best to answer with the same one I'm spoken to but sometimes the concept I want to talk about doesn't exist in that language or I don't remember and it becomes a strange mix of languages.

Oh, well, I guess it would be frustrating if your brain was stubborn and didn't switch, but as long as you can make the transition fairly quickly I don't understand why people would get upset with you over it?

The people I know well aren't annoying about it, the people I meet for the first time often seem to think I'm making fun of them.
Which I understand but it's really not on purpose.

I sometimes struggle finding the right words in English, but have the perfect phrase in sign. It's getting rarer, now that I sign less, but it's irritating to me.

No idea what people make of me staring blankly into space...

Don't you just use the sign, in case they happen to know it?
