I never buy a whole chicken to cook. But that seems like such a smart idea. I usually get chicken breasts and cook something with it. I will freeze my leftovers tho if I made too much to eat later. My sister brought home a rotisserie chicken and made supper with it last week. WELL I mostly made it because she was running behind. So yeah, I basically made it.

Yesterday I had
Breakfast: nope lol
Lunch: chicken tacos and a cookie...and peanut mms for an afternoon snack.
Supper: I roasted broccoli, brussel sprouts, carrots, and turkey sausage (Like kielbasa, but just turkey) with some garlic salt. It turned out so good. Then I had some regular mms because my sister had leftovers from a cookie pizza she had to make for tonight.

Today:

breakfast: a banana I HAD to share with one of my dogs. Because she loves bananas.
lunch: leftovers of roasted veggies and sausage, mandarin oranges. A granola bar for a snack later
supper: not sure yet. Going out so might just get takeout somewhere and bring it home.

oh dear I think I missed a few days; today however I had a few crisp snacks for lunch and an iced coffee and for dinner I had a butternut squash risotto with a créme brulée for dessert (store bought)

Whole chickens are so versatile!
We usually either make chicken stock or bake it for the first meal, then turn the leftover meats into a spicy cold dish :)

Today I'm letting myself have an lazy day doing nothing but watch dramas at home :mcsquee:
For brunch I was really craving Popeye's so I went out and grabbed a chicken sandwich, also got some milk tea.
I'm snacking on some marinated spicy pig ears while watching TV this afternoon /o/
Dinner will likely be something healthy, salad and soup probably XD

Now meal prepping is so fashionable, but people seem to be prepping only fancy dishes.
I prefer a simpler approach: cook large amounts of whatever won't give me any extra work.
A whole chicken is not more work than a piece of chicken, so I'd rather do it whole.

Most of my meal prepping is super simple dishes that everyone says looks good lol. I gave up on it, but I used to make dump and go recipes and freeze them, so when I'm ready I either just dump them into my slow cooker or thaw them out for supper. Used to spend 2-3 hours on it, then I would have over a months worth of meals ready to go. I should get back into that. Or do "two at a time" where you make one now, then prep one up to freeze for later.

Also ended up getting Dairy Queen for supper. I got a cheeseburger with fries and a caramel fudge cheesecake blizzard that wasn't as good this time around as it was the first time I had it.

I'm usually more the type of "two at a time". Or "four at a time" XD
For example, when I make bolognesa I usually make A LOT because it's so versatile.
Same with cod, I usually buy a lot so I de-salt it and cook it all at oce.

When I was in uni I tried meal prepping a lot too. I'd buy bulk chicken/beef bones to make broth that can last for many meals. I'd also cut up the meat to use in noodles, stir fried rice, etc /o/

I always make broth at home.
It takes no work at all, really. And if I have no time for it I make it in the slow cooker so I don't have to keep an eye on it.
I keep a bit on the refrigerator and freeze the rest.

I never made my own broth before. I really should since every time I see a youtube vid of people making their own broth it's always just chicken bones/scraps and veggie scraps. And I go through so many veggies. I should start freezing my scraps to make my own broth.

The only thing I purposefully make way to much of it freeze is my family's spaghetti sauce recipe. One of these days I'm going to make the tomato part of it myself (juice, idr of the top of my head if I need any tomato paste). But most things I make is like 3-5 servings to begin with. So leftovers for days.

Yesterday meals are
Breakfast: nope lol
Lunch: more leftover roast veggies with turkey sausage, a granola bar and lemon snack bar later on in the afternoon.
Supper: oh boy, went and saw a movie so I had a pretzel with cheese, a lil bit of popcorn, and stole some of my nephews fruit snacks when I was holding it for him lol. Then got home really late and was still hungry so I had a corndog lol. I wasn't hungry until I plopped into bed and my stomach started grumbling it's protests.

Yeah, making broth takes no work and no effort.
You can make veggies broth if that's what you use the most. I do.
And whenever I have bones (for example, after roasting the chicken) I make broth with bones+veggies, but I never bother buying them on purpose.

Fish broth is the only one that requires being a bit careful, and it's not even hard either.
