Well, not specifically cops, but they can join the fun too if they'd like. :) Every Mardi Gras there's probably some parish in this state where they have a chicken run. It's fun for most of the people down here, though it's bad news for the chicken lol.

i've heard of gumbo but i don't think ive ever eaten it. nor do i really know whats in it lol.
